Ingredients
- 1 ½ lb Campari (or cherry) tomatoes
- 0.5 oz fresh basil
- 1 cup mayonnaise
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- 2 tablespoons garlic stir-in paste
- 4 oz saltine crackers (1 sleeve)
Steps
- Quarter tomatoes; remove seeds and pulp. Chop basil finely (½ cup).
- Combine mayonnaise, salt, pepper, garlic paste, and basil in large bowl; whisk to blend. Fold in tomatoes. Crush crackers lightly and fold into tomato mixture. Serve.
