Ingredients

  • Cooking spray
  • 5 medium Gala (or Granny Smith) apples
  • ½ cup apple cider (or juice)
  • 1 tablespoon lemon juice
  • 1 cup sugar, divided
  • 1 ¼ teaspoons apple pie spice (or ground cinnamon)
  • ½ cup chopped walnuts
  • 1 ½ cups + 2 tablespoons self-rising flour
  • ½ teaspoon kosher salt, divided
  • 8 tablespoons unsalted butter, cut into cubes
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

Steps

    1. Preheat oven to 350°F. Coat 9-inch deep-dish pieplate (or 9-inch square baking pan) with spray; place pieplate on baking sheet (for ease in handling). Chop apples into ½-inch pieces (6 cups). Combine apples with cider, lemon juice, ½ cup sugar, 1 teaspoon apple pie spice, walnuts, 2 tablespoons flour, and ¼ teaspoon salt until blended.
    2. Whisk remaining 1 ½ cups flour, 6 tablespoons sugar, ¼ teaspoon salt until well blended. Cut butter into cubes; add to flour mixture, using two forks, and mixing well until pea-size crumbs form. Make a well in center of flour; add eggs and vanilla and gently stir into flour mixture until dough begins to form.
    3. Transfer apples to pieplate. Use two spoons, one to scoop and one to scrape (heaping tablespoons), to add flour mixture evenly over apples. Combine remaining 2 tablespoons sugar and ¼ teaspoon apple pie spice; sprinkle evenly over flour mixture. Bake 50–55 minutes or until bubbly and topping is golden. Transfer to wire rack to cool 15 minutes. Serve.
