South Carolina Frogmore Stew

Ingredients

  • 2 ears fresh corn
  • 1 medium sweet onion
  • 1 (14 oz) link smoked Kielbasa sausage
  • 2 (12 oz) domestic (or imported) lager beer
  • 4 cups water
  • ¼ cup seafood seasoning
  • ¼ cup hot pepper sauce
  • 8 medium red skin potatoes
  • 1 ½ lb large shrimp, shell on
  • Cocktail sauce (optional, for serving)

Steps

    1. Remove corn husks and silks; chop cobs into 2- or 3-inch pieces. Slice onion into quarters. Cut Kielbasa into 2-inch lengths; set aside.
    2. Combine in large pot: beer, water, onions, seafood seasoning, and hot sauce. Bring to boil on high, then add potatoes and sausage. Cook 20–25 minutes, until potatoes are tender. Add corn and continue cooking 5 minutes. Stir in shrimp and cook 3–4 minutes, until pink and opaque. Drain and serve with lemon wedges and cocktail sauce (if desired).
