Ingredients
- For sub:
- 1 loaf Bakery Cuban bread
- ½ cup mayonnaise
- ¼ cup chipotle mayonnaise (optional)
- 6 slices Havarti cheese (about 3 oz)
- 3 oz sliced fresh sweet onions
- 7 oz thin-sliced roast beef
- 4 oz thin-sliced pastrami
- 2 oz thin-sliced hard salami
- ⅓ cup dill pickle chips
- 1 cup crispy fried onions
- For costumes:
- 1 small red bell pepper
- 2 whole green olives with pimientos
- 3 toothpicks
Steps
- Cut bread in half lengthwise; spread each half evenly with mayonnaise and chipotle mayonnaise, if using. Cut sweet onion slices and cheese in half.
- Place on bottom half bread (in this order): cheese, roast beef, pastrami, and salami. Top with pickle chips, sweet onions, fried onions, and top half bread.
- Cut 1 (4-inch-long) piece from each end of sub for head and tail; cut remaining sub into 2-inch-long slices.
- Cut 1-inch-wide, 3-inch-long strip from bell pepper, then cut "v" out of 1 end of strip (for tongue). Place bell pepper tongue at end of 1 (4-inch) piece of sub; secure with toothpick.
- Place olives pimiento-side out above tongue and secure with toothpicks (for eyes). Separate segments and arrange sub on platter in "slithering" position, ending with remaining 4-inch piece for tail.
