Ingredients

  • 4 (6 oz) salmon fillets, skin removed (about 1 ½ lb)
  • 4 teaspoons mesquite (or barbecue) seasoning
  • 1 tablespoon canola oil
  • 4 teaspoons unsalted butter

Steps

    1. Preheat large sauté pan on medium-high 2–3 minutes. Rub 1 teaspoon seasoning onto both sides of each salmon fillet (wash hands).
    2. Place oil in pan, then add salmon; cook 2–3 minutes each side until centers of fillets flake easily and are 145°F. Remove salmon from pan; top each fillet with 1 teaspoon butter. Serve.
