Ingredients
- 1 medium shallot, finely chopped
- 2 Belgian endives
- 1 ½ tablespoons sherry vinegar
- 1 ½ tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- 2 ½ tablespoons vegetable oil
- 1 ½ tablesoons walnut oil
- 1 Golden Delicious apple, sliced thinly
- 1 small head of chicory, torn
- ½ cup walnut halves
- 8 oz boneless smoked trout or whitefish
- 1 cup watercress
Steps
- Chop shallot; separate leaves from endive. Whisk shallot, vinegars, mustard, salt, and pepper until blended. Slowly pour in oils while whisking constantly.
- Slice apples; tear chicory into small pieces. Arrange endive, apple, frisee, walnuts, trout, and watercress on a serving platter. Drizzle with dressing. Serve.
