Smoked Trout and Chicories Salad

Ingredients

  • 1 medium shallot, finely chopped
  • 2 Belgian endives
  • 1 ½ tablespoons sherry vinegar
  • 1 ½ tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 2 ½ tablespoons vegetable oil
  • 1 ½ tablesoons walnut oil
  • 1 Golden Delicious apple, sliced thinly
  • 1 small head of chicory, torn
  • ½ cup walnut halves
  • 8 oz boneless smoked trout or whitefish
  • 1 cup watercress

Steps

    1. Chop shallot; separate leaves from endive. Whisk shallot, vinegars, mustard, salt, and pepper until blended. Slowly pour in oils while whisking constantly.
    2. Slice apples; tear chicory into small pieces. Arrange endive, apple, frisee, walnuts, trout, and watercress on a serving platter. Drizzle with dressing. Serve.
