Smoked Sausage Skewers with Peppers and Onions

Ingredients

  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 large sweet onion
  • 1 tablespoon fresh rosemary
  • 1 (12 oz) package smoked sausage (4 links)
  • 2 tablespoons grapeseed oil
  • 1 teaspoon creole seasoning
  • 4 (12-inch) metal (or wooden) skewers
  • ¼ cup whole-grain mustard
  • ¼ cup horseradish sauce

Steps

    1. Cut bell peppers and onion into 1-inch pieces; chop rosemary finely. Cut sausage links into 5 (1-inch) pieces each. Toss peppers and onions with oil, creole seasoning, and rosemary. Alternate peppers, onions, and sausages evenly onto skewers.
    2. Preheat grill (or grill pan) on medium. Place skewers on grill. Grill 10–12 minutes, turning occasionally, until vegetables are crisp-tender and sausages are 165°F. Serve skewers with mustard and horseradish sauce.
