Smoked Sausage and Beer-Cheese Dip

Ingredients

  • 4 oz cream cheese
  • 4 links Italian cheese smoked chicken sausage (about 9 oz)
  • 3 slices bacon
  • 1 (8 oz) package diced fresh yellow onions
  • 2 tablespoons all-purpose flour
  • 2 cups shredded cheddar cheese
  • 1 cup beer (or milk)
  • ½ cup milk
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Soft pretzels, tortilla chips, or sliced baguette (optional for dipping)

Steps

    1. Cut cream cheese into cubes and set aside to soften. Cut sausages into 4 long strips each, then chop. Cut bacon into small pieces (wash hands). Preheat large, heavy-bottom stockpot on medium 1–2 minutes. Add bacon and cook 4–5 minutes, stirring occasionally, until crisp. Remove bacon and set aside, leaving drippings in pot.
    2. Add onions and sausage to pot. Cook and stir 3–4 minutes until onions soften and sausage browns. Add flour; cook and stir 1 minute. Add beer and milk; cook and stir 2–3 minutes until mixture thickens slightly.
    3. Reduce heat to low. Stir in cream cheese, cheddar cheese, mustard, Worcestershire sauce, onion powder, and garlic powder until cheese has melted and mixture is thoroughly blended and hot. Top with bacon and serve immediately with soft pretzels, tortilla chips, or baguette slices for dipping, if using.
