Ingredients
- 3 tablespoons kosher salt
- 3 tablespoons brown sugar
- 2 tablespoons freshly cracked black pepper
- 3 tablespoons paprika
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 bone-in (or boneless) Boston butt (or pork shoulder) roast (7–9 lb)
- ½ cup prepared mustard
- Barbecue sauce (optional)
Steps
- Set up smoker following manufacturer's instructions for 250°F.
- Combine salt, brown sugar, pepper, paprika, garlic powder, and onion powder in small bowl. Rub pork on all sides with mustard, then with seasoning mixture.
- Place pork in smoker and cook 7–10 hours until very tender and 200°F. Let pork rest 30 minutes. Shred pork and serve with your favorite barbecue sauce, if using.
Chef's Tip: Place an aluminum pan with 3 inches of water in smoker with pork to promote a moist cooking environment.
