Ingredients
- 2 medium russet potatoes (about 20 oz)
- 1 ¼ cups reduced-sodium chicken broth (or stock)
- 1 tablespoon dried minced onions
- 2 tablespoons unsalted butter
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
Steps
- Peel potatoes and cut into 1-inch cubes. Combine potatoes, broth, and onions in medium saucepan on high; cover and bring to a boil.
- Reduce heat to medium; cook 10–12 minutes, stirring occasionally, until potatoes are tender.
- Drain potatoes, reserving ¼ cup cooking liquid; return to same pan. Stir in cooking liquid, butter, salt, and pepper. Mash potatoes slightly with back of wooden spoon (or potato masher). Serve.
