Ingredients

  • 1 lb lean ground beef
  • 4 oz sliced fresh baby portabella mushrooms
  • ⅓ cup diced fresh yellow onions
  • ⅓ cup tri-pepper mix (diced fresh green, red, and yellow bell peppers)
  • 1 (24 oz) jar caramelized onion pasta sauce
  • 1 cup water
  • 1 (9 oz) box oven-ready lasagna pasta
  • 3 cups fresh baby spinach
  • 1 ¾ cups shredded Italian-style cheese blend

Steps

    1. Crumble ground beef into large, microwave-safe bowl (wash hands). Stir in mushrooms, onions, and tri-pepper mix; cover and microwave on HIGH 8 minutes, stirring halfway through cook time, or until meat is 160°F. Stir in pasta sauce and water until well blended.
    2. Spread 2 ½ cups meat sauce in bottom of large sauté pan, then top with 4 lasagna noodles, 1 cup sauce, 1 cup spinach, and ¼ cup cheese. Repeat layers 2 more times, then finish with remaining noodles, meat sauce, and 1 cup cheese.
    3. Cover and cook on medium-high 3–4 minutes until sauce begins to boil. Reduce heat to medium and simmer 10 minutes or until pasta is tender, liquid is absorbed, and cheese is melted. Serve.
