Ingredients
- ¼ cup flour
- 4 skate fillets (about 2 lb)
- 1 teaspoon kosher salt
- 1 tablespoon canola oil
- 3 tablespoons unsalted butter, divided
- 1 tablespoon capers
- ½ cup garlic butter croutons, coarsely chopped
- 2 tablespoons fresh lemon juice
Steps
- Place flour in shallow bowl. Season fish with salt, then coat with flour, shaking off excess.
- Preheat large sauté pan in medium-high 1–2 minutes. Add oil and 1 tablespoon butter, melting until butter is foamy, then add fish; cook 3–4 minutes on each side (turning gently) or until opaque and separates easily. Remove fish from pan.
- Add remaining 2 tablespoons butter to pan, melting until foamy. Stir in capers and croutons; cook and stir 30 seconds. Stir in lemon juice; serve over fish.
Additional Information
Always check fish for bones and cook to an internal temperature of 145°F.

Broil: Preheat broiler. Place skate fillets (2 lb) on foil-lined baking sheet. Microwave 4 tablespoons butter, 2 tablespoons soy sauce, and 1 teaspoon minced garlic on HIGH for 1 minute. Top each fillet with 1 tablespoon butter mixture; broil 5–6 minutes or until opaque and separates easily. Top with remaining butter mixture.
