Simplified Beef Mole

Ingredients

  • 2 ½ lb boneless chuck roast
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 tablespoon canola oil
  • 1 (16-oz) container fresh salsa
  • 1 (10-oz) can enchilada sauce
  • ½ cup hot chocolate powder
  • 1 ½ teaspoons ground cinnamon
  • 1 tablespoon chipotle pepper sauce

Prep

    • Cut beef into bite-size pieces.

Steps

    1. Preheat large sauté pan on medium-high 2–3 minutes. Season beef with salt and pepper (wash hands). Place oil in pan, then add beef (in batches, if needed); cook and stir 1–2 minutes or until well browned.
    2. Transfer beef and remaining ingredients to slow cooker. Cover and cook on HIGH 1 ½–2 hours (or LOW 2 ½–3 hours) until meat is tender. Serve over rice, if desired.
