Ingredients
- 1 hothouse cucumber
- 1 (5 oz) bag spring mix (or European) salad blend
- 1 cup grape tomatoes
- ½ cup seasoned croutons
- 1 (8 oz) package cooked chicken strips
- ¼ cup crumbled blue (or feta) cheese
- ¼ cup creamy Italian dressing (or balsamic vinaigrette)
Steps
- Cut cucumber into coins. Place salad blend, tomatoes, cucumbers, and croutons in large salad bowl.
- Heat chicken following package instructions if desired.
- Add chicken, cheese, and dressing to bowl; toss and serve.
