Simple Salad with Chicken

Ingredients

  • 1 hothouse cucumber
  • 1 (5 oz) bag spring mix (or European) salad blend
  • 1 cup grape tomatoes
  • ½ cup seasoned croutons
  • 1 (8 oz) package cooked chicken strips
  • ¼ cup crumbled blue (or feta) cheese
  • ¼ cup creamy Italian dressing (or balsamic vinaigrette)

Steps

    1. Cut cucumber into coins. Place salad blend, tomatoes, cucumbers, and croutons in large salad bowl.
    2. Heat chicken following package instructions if desired.
    3. Add chicken, cheese, and dressing to bowl; toss and serve.
