Simple Mason Jar Salad

Ingredients

  • 1 lemon, for juice
  • 1 green apple, coarsely chopped
  • 2 ribs celery, thinly sliced
  • 3 radishes, thinly sliced
  • ⅓ cup lite apple cider (or poppy seed) salad dressing
  • 3 tablespoons sweetened shredded coconut
  • ⅛ teaspoon cayenne pepper
  • 2 (1-qt) wide-mouth mason jars with lids
  • ½ cup chopped walnuts
  • 1 (5-oz) package baby mixed greens

Steps

    1. Squeeze lemon for juice (2 tablespoons) into medium bowl. Cut apple into bite-size pieces; add to lemon juice and toss to coat. Slice celery and radishes.
    2. Combine dressing, coconut, and cayenne until blended; pour ½ of the dressing into bottom of each jar. Working from the bottom up, layer apples, celery, radishes, and walnuts. Pack in greens and seal jar; chill at least 30 minutes or overnight.
    3. Serve by shaking the jars, then pour the salad into serving bowls; use tongs, if needed, to remove salad from jar. (Each jar contains 2 servings.)
