Ingredients
- Nonstick aluminum foil
- 1 (8.5 oz) GreenWise crusty wheat baguette
- 1 (4 oz) container lemon-herb finishing butter
- 1 lb GreenWise red potatoes
- 1 (16 oz) bag GreenWise baby carrots
- 1 medium GreenWise yellow onion
- 6 teaspoons GreenWise coconut oil, divided
- 5 teaspoons seafood seasoning, divided
- 2 teaspoons GreenWise garlic powder
- 4 links GreenWise hot (or mild) chicken sausage
- 1 lb GreenWise chicken fillets
- 1 lb large, peeled/deveined GreenWise shrimp, tails removed
Steps
- Preheat oven to 400°F; line baking sheet with foil. Split baguette lengthwise. Brush with butter, then place halves back together and wrap with foil; set aside. Cut potatoes, carrots, and onion into 1-inch pieces and place in large mixing bowl. Add 2 teaspoons coconut oil, 2 teaspoons seafood seasoning, and 1 teaspoon garlic and toss to combine, then place in single layer on baking sheet. Bake 15 minutes.
- Cut sausages and chicken fillets into 1-inch pieces and place in second large mixing bowl (wash hands). Add 2 teaspoons coconut oil, 1 teaspoon seafood seasoning, and 1 teaspoon garlic and toss to combine. Remove sheet pan from oven and place sausages and chicken on pan with potatoes and carrots; stir to combine. Bake 12 minutes more.
- Stir together shrimp and remaining 2 teaspoons coconut oil and 1 teaspoon seafood seasoning. Remove sheet pan from oven and add shrimp to other ingredients; stir to combine. Place bread and baking sheet in oven; bake 12–15 minutes more until chicken and sausage are 165°F and shrimp is pink and opaque. Sprinkle remaining 1 teaspoon seafood seasoning on top; serve with baguette.
