Seared Spam, Potato, and Spinach Hash

Ingredients

  • 1 (12 oz) can Spam
  • ¾ cup yellow onion
  • 4 cloves garlic
  • 2 tablespoons Italian parsley
  • ½ cup red bell pepper
  • ¾ lb small red potatoes
  • 2 tablespoons olive oil, divided
  • ½ teaspoon fennel seeds
  • ½ teaspoon crushed red pepper
  • ½ cup dry white wine
  • 2 tablespoons garlic-herb butter
  • ¼ teaspoon kosher salt
  • 5 oz baby spinach
  • ¼ cup yum-yum sauce, divided

Steps

    1. Preheat large sauté pan over medium-high for 4–5 minutes. Slice spam into 4 even portions (wash hands). Peel and medium dice onion; chop garlic, and parsley. Remove seeds and membrane from bell pepper, then medium dice. Small dice potatoes.
    2. Add 1 tablespoon olive oil to pan. Sear spam for 2 minutes on each side; remove spam from pan and keep warm. Add to same pan: remaining 1 tablespoon oil, onions, garlic, bell pepper, potatoes, parsley, fennel seeds, and crushed red pepper. Cook 7–8 minutes, stirring occasionally, until potatoes are fork-tender.
    3. Add wine, butter, salt, and spinach; continue cooking until spinach is just wilted. To serve, evenly plate vegetable mixture in 4 serving bowl. Top each bowl with spam and garnish with sauce. Serve.
