Sautéed Broccoli Rabe and Tomatoes

Ingredients

  • 1 bunch broccoli rabe, coarsely chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely chopped
  • ½ cup julienne-cut, sun-dried tomatoes
  • ¼ cup shredded Parmesan cheese

Steps

    1. Chop broccoli rabe including leaves, florets, and stems; chop garlic. Preheat oil in large sauté pan on medium 2–3 minutes.
    2. Place garlic in pan; cook 1 minute or until fragrant. Stir in broccoli rabe and tomatoes; cook and stir 5–6 minutes or until tender. Top with cheese.
Other Preparation Methods
    • Salad: Add 1 cup chopped broccoli rabe to a bag of Asian salad blend. Toss with ginger salad dressing and chow mein noodles.
    • Boil: Add 2 cups chopped broccoli rabe to ½ cup salted boiling water; cook 4–5 minutes or until tender.
