Sausage-Apple Biscuits with Cinnamon-Apple Compote

Ingredients

  • 6 links frozen chicken apple sausage (about 4 ½ oz)
  • 2 medium Granny Smith apples
  • 2 ½ cups gluten-free all-purpose flour (or baking mix)
  • ¼ cup flax seeds
  • 2 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon, divided
  • ½ cup egg substitute
  • 1 cup buttermilk
  • ¼ cup buttery-flavor spread
  • ¼ cup unsweetened applesauce
  • 3 tablespoons maple syrup
  • ¼ cup sweetened, dried cranberries
  • ¼ cup golden raisins
  • ½ cup nonfat plain Greek yogurt

Steps

    1. Preheat oven to 400°F. Chop sausage; chop apples (2 cups).
    2. Combine flour, flax seeds, baking powder, baking soda, and ½ teaspoon cinnamon; whisk until blended. Stir in egg substitute, buttermilk, spread, and applesauce until dough forms. Stir in sausage and 1 cup apples.
    3. Divide dough and form into 12 (½-cup) biscuits. Arrange on baking sheet; bake 15–18 minutes until toothpick inserted in center comes out clean.
    4. Meanwhile, place syrup, cranberries, raisins, and remaining 1 cup apples and ½ teaspoon cinnamon in small saucepan; cook on low 5–6 minutes, stirring occasionally, until apples are tender. Serve biscuits with apple compote and yogurt.
