Ingredients
- 6 links frozen chicken apple sausage (about 4 ½ oz)
- 2 medium Granny Smith apples
- 2 ½ cups gluten-free all-purpose flour (or baking mix)
- ¼ cup flax seeds
- 2 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon ground cinnamon, divided
- ½ cup egg substitute
- 1 cup buttermilk
- ¼ cup buttery-flavor spread
- ¼ cup unsweetened applesauce
- 3 tablespoons maple syrup
- ¼ cup sweetened, dried cranberries
- ¼ cup golden raisins
- ½ cup nonfat plain Greek yogurt
Steps
- Preheat oven to 400°F. Chop sausage; chop apples (2 cups).
- Combine flour, flax seeds, baking powder, baking soda, and ½ teaspoon cinnamon; whisk until blended. Stir in egg substitute, buttermilk, spread, and applesauce until dough forms. Stir in sausage and 1 cup apples.
- Divide dough and form into 12 (½-cup) biscuits. Arrange on baking sheet; bake 15–18 minutes until toothpick inserted in center comes out clean.
- Meanwhile, place syrup, cranberries, raisins, and remaining 1 cup apples and ½ teaspoon cinnamon in small saucepan; cook on low 5–6 minutes, stirring occasionally, until apples are tender. Serve biscuits with apple compote and yogurt.
Do not eat raw dough/batter.
