Sausage, Apple, and Butternut Squash Soup

Ingredients

  • 2 tablespoons water
  • 2 (13 oz) packages diced fresh butternut squash (about 6 cups)
  • 1 can great northern (or cannellini) beans (15–16 oz)
  • 2 tablespoons vegetable oil
  • 4 links brown sugar–apple sausage (about 16 oz)
  • 1 (8 oz) container trinity mix (diced fresh onions, bell peppers, and celery)
  • 1 tablespoon garlic stir-in paste
  • 1 (14.5 oz) can diced fire-roasted tomatoes
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 cup apple cider
  • 4 cups reduced-sodium chicken broth (or stock)
  • 2 medium Gala apples
  • ½ cup cooked bacon pieces
  • 3 tablespoons lightly dried parsley (optional)

Steps

    1. Place water and 1 package butternut squash in microwave-safe bowl. Cover and microwave on HIGH 5 minutes until very tender. Drain and rinse beans.
    2. Preheat large Dutch oven (or heavy-bottomed stockpot) on medium-high 2–3 minutes. Place oil and sausages in Dutch oven; cook 8–10 minutes, turning occasionally, until sausages are browned and 160°F. Remove sausages and cover to keep warm.
    3. Stir in trinity mix and garlic paste; cook and stir 2 minutes. Add beans, diced tomatoes (do not drain), salt, pepper, cider, broth, and remaining 1 package butternut squash. Bring to a boil, then reduce heat to medium-low and simmer 5 minutes.
    4. Meanwhile, cut sausages in half lengthwise, then cut into half-moon slices. Peel apples and cut into small cubes (about 2 cups). Mash microwaved butternut squash until very smooth. Add sausages, apples, and mashed butternut squash to Dutch oven. Stir and simmer 5 minutes or until vegetables are tender. Divide among serving bowls; garnish with bacon and parsley, if using. Serve.
    Chef's Tip: Add sour cream or Greek yogurt to your soup for extra richness.
