Ingredients

  • 2 sheets frozen puff pastry
  • ½ cup frozen green peas
  • Parchment paper
  • 1 small yellow onion
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon garam masala
  • 1 ½ cups refrigerated mashed potatoes
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • Flour (for dusting)
  • 1 large egg
  • 1 teaspoon water

Steps

    1. Thaw puff pastry and peas. Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
    2. Preheat large sauté pan on medium 2–3 minutes. Dice onion. Add oil and onions to pan. Cook 10–12 minutes, stirring occasionally until onions begin to brown. Remove pan from heat and stir in cumin, coriander, and garam masala.
    3. Combine in medium bowl: onion mixture, potatoes, peas, salt, and pepper. Lightly dust work surface with flour. Roll each puff pastry sheet into a 12- x 9-inch rectangle, then cut each sheet into 6 equal squares and place on baking sheets.
    4. Combine egg and water, whisking to blend. Divide potato mixture evenly among centers of dough squares. Brush edges of dough with egg mixture. Starting from 1 corner, fold pastry over filling, forming a triangle; press edges firmly to seal. Poke a hole in top of each samosa to vent. Bake 18–20 minutes until samosas are golden and filling is hot. Let stand to cool 10 minutes before serving.
