Salsa Pork Tenderloin and Rice

Ingredients

  • 1 pork tenderloin (about 1 lb)
  • 2 tablespoons canola oil, divided
  • 1 teaspoon total seasoning
  • 1 teaspoon smoked paprika
  • 2 cups fresh salsa (Produce)
  • 2 (8.8-oz) pouches precooked brown rice
  • 1 avocado
  • 2 tablespoons fresh cilantro, coarsely chopped
  • ¼ cup fat-free sour cream

Steps

    1. Cut pork into bite-size pieces (wash hands). Preheat large sauté pan on medium-high 2–3 minutes. Coat pork with 1 tablespoon oil, seasoning, and paprika. Place remaining 1 tablespoon oil in pan, then add pork; cook and stir 2–3 minutes or until browned on all sides.
    2. Add salsa to pork; cook and stir 2–3 minutes. Reduce heat to simmer; cook and stir [5–6 minutes] or until pork is 145°F and sauce has reduced by about one-half.
    3. Cook rice following package instructions for microwave. Cut avocado into bite-size pieces; chop cilantro. Serve pork over rice and top with avocado, sour cream, and cilantro.
