Salsa Mac and Cha-Cha-Cheese Cups

Ingredients

  • 1 (14-oz) box macaroni & cheese dinner
  • 4 slices bacon
  • ¼ cup fresh cilantro, coarsely chopped
  • 2 cups cheese crackers, crushed and divided
  • 2 cups shredded mild cheddar cheese
  • 1 can diced green chiles (3–4 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Cooking spray
  • ½ cup salsa verde
  • 1 cup prediced tomatoes

Steps

    1. Prepare macaroni & cheese following stovetop package instructions. Microwave bacon following package instructions, then chop. Chop cilantro and crush crackers.
    2. Preheat oven to 375°F. Place in bowl: bacon, 1 cup crackers, cheese, chiles, garlic powder, cumin, and macaroni & cheese; stir until blended. Coat 12-cup muffin pan with spray.
    3. Spoon ¼ cup macaroni & cheese mixture into each cup; layer with 2 teaspoons salsa and remaining macaroni & cheese. Top with remaining 1 cup crackers. Bake 18–20 minutes or until center is hot. Let stand 10 minutes to cool. Remove cups from pan; top with tomatoes and cilantro. Serve.
