Ingredients
- 1 (14-oz) box macaroni & cheese dinner
- 4 slices bacon
- ¼ cup fresh cilantro, coarsely chopped
- 2 cups cheese crackers, crushed and divided
- 2 cups shredded mild cheddar cheese
- 1 can diced green chiles (3–4 oz)
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Cooking spray
- ½ cup salsa verde
- 1 cup prediced tomatoes
Steps
- Prepare macaroni & cheese following stovetop package instructions. Microwave bacon following package instructions, then chop. Chop cilantro and crush crackers.
- Preheat oven to 375°F. Place in bowl: bacon, 1 cup crackers, cheese, chiles, garlic powder, cumin, and macaroni & cheese; stir until blended. Coat 12-cup muffin pan with spray.
- Spoon ¼ cup macaroni & cheese mixture into each cup; layer with 2 teaspoons salsa and remaining macaroni & cheese. Top with remaining 1 cup crackers. Bake 18–20 minutes or until center is hot. Let stand 10 minutes to cool. Remove cups from pan; top with tomatoes and cilantro. Serve.
