Ingredients
- 1 lb fresh tomatoes
- 1 medium yellow onion
- 1 medium yellow bell pepper
- 1 medium green bell pepper
- 2 cloves garlic
- ¼ bunch fresh Italian parsley
- 1 small jalapeño pepper
- 3 tablespoons red wine vinegar
- ½ teaspoon adobo seasoning
- ¼ cup extra-virgin olive oil
- ½ teaspoon dried oregano
Steps
- Remove seeds from tomatoes. Chop tomatoes, onion, both bell peppers, garlic, parsley, and jalapeño finely, discarding seeds and membranes if desired.
- Whisk vinegar, adobo seasoning, oil, and oregano in medium bowl. Stir in chopped vegetables. Chill salsa 30 minutes. Stir again and serve.
