Ingredients
- ⅓ cup smoked almonds
- 2 Bartlett pears
- 2 oranges, for juice/segments
- 2 teaspoons apple cider vinegar
- 1 teaspoon Dijon mustard
- ¼ teaspoon kosher salt
- ¼ cup olive oil
- 5 oz spring mix salad blend
Steps
- Chop almonds coarsely. Halve pears, then core and slice thinly. Juice 1 orange (¼ cup); peel remaining 1 orange and separate segments.
- Combine in large bowl; orange juice, vinegar, mustard, and salt. Drizzle olive oil in slowly, whisking continuously until well blended.
- Add spring mix and pears to bowl; toss to coat, then divide among serving plates. Top with orange segments and almonds. Serve.
