Salad with Citrus, Pears, and Almonds

Ingredients

  • ⅓ cup smoked almonds
  • 2 Bartlett pears
  • 2 oranges, for juice/segments
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon kosher salt
  • ¼ cup olive oil
  • 5 oz spring mix salad blend

Steps

    1. Chop almonds coarsely. Halve pears, then core and slice thinly. Juice 1 orange (¼ cup); peel remaining 1 orange and separate segments.
    2. Combine in large bowl; orange juice, vinegar, mustard, and salt. Drizzle olive oil in slowly, whisking continuously until well blended.
    3. Add spring mix and pears to bowl; toss to coat, then divide among serving plates. Top with orange segments and almonds. Serve.
