Roasted Turkey with Bourbon-Butter Glaze

Ingredients

  • 3 lemons
  • 8 tablespoons unsalted butter, softened
  • ½ cup brown sugar
  • 2 teaspoons dried oregano
  • 1 ½ teaspoons kosher salt, divided
  • ¾ teaspoon pepper, divided
  • 1 fresh whole turkey (10–12 lb)
  • ¼ cup bourbon

Steps

    1. Preheat oven to 325°F. Halve two lemons; place in roasting pan, flesh side down. Zest remaining lemon (1 teaspoon). Combine lemon zest, butter, brown sugar, oregano, salt, and pepper; divide mixture in half.
    2. Slip fingers between skin and meat of the turkey breast to loosen skin. Lift skin and carefully use a spatula (or fingers) to spread one-half of the brown sugar mixture directly over the breast; place turkey, breast side up, on lemons (wash hands); roast turkey 2–2 ½ hours. After turkey has cooked about 1 ½ hours, place bourbon and remaining half of brown sugar mixture to small saucepan on medium; cook and stir 3–4 minutes or until sugar dissolves.
    3. Roast turkey until browned and 165°F, basting with glaze during last 30 minutes of cook time. Let turkey stand 10 minutes before slicing. Serve.
