Ingredients
- Aluminum foil
- 4 medium sweet potatoes
- ¼ cup canola oil
- ½ teaspoon kosher salt
- ½ teaspoon pepper
- ¼ cup honey
- 1 teaspoon ground ginger
- ⅓ cup balsamic vinegar
- 4 oz orange marmalade
Steps
- Preheat oven to 400°F. Line baking sheet with foil. Peel potatoes and cut into 1-inch cubes. Arrange potatoes in single layer on baking sheet; drizzle with oil and season with salt and pepper. Bake 35–40 minutes, stirring occasionally, until potatoes are tender and golden.
- Meanwhile, whisk honey, ginger, vinegar, and marmalade in small saucepan on medium. Cook 4–5 minutes, stirring occasionally, until mixture has reduced by one-half and thickened. Drizzle orange-balsamic glaze over potatoes. Serve.
