Roasted Sweet Potatoes with Orange-Balsamic Glaze

Ingredients

  • Aluminum foil
  • 4 medium sweet potatoes
  • ¼ cup canola oil
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ cup honey
  • 1 teaspoon ground ginger
  • ⅓ cup balsamic vinegar
  • 4 oz orange marmalade

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Peel potatoes and cut into 1-inch cubes. Arrange potatoes in single layer on baking sheet; drizzle with oil and season with salt and pepper. Bake 35–40 minutes, stirring occasionally, until potatoes are tender and golden.
    2. Meanwhile, whisk honey, ginger, vinegar, and marmalade in small saucepan on medium. Cook 4–5 minutes, stirring occasionally, until mixture has reduced by one-half and thickened. Drizzle orange-balsamic glaze over potatoes. Serve.
