Ingredients
- 1 tablespoon salt-free southwest seasoning
- 1 pork tenderloin (about 1 lb)
- ½ teaspoon kosher salt
- ¼ cup mojo marinade
- 3 tablespoons fresh cilantro, coarsely chopped
- 1 tablespoon green onions, coarsely chopped
- 1 lime, for juice
- ¼ cup fat-free sour cream
Prep
- Preheat oven to 450°F.
- Chop cilantro and green onions.
- Squeeze lime for juice (1 tablespoon).
Steps
- Preheat oven to 450°F. Season pork with southwest seasoning and salt, then place in baking pan. Pour marinade over pork; bake 15–18 minutes and until 160°F (for medium). Let stand 2–3 minutes before serving. Chop cilantro and green onions. Squeeze lime for juice (1 tablespoon).
- Combine sour cream, lime juice, green onions, and cilantro until blended. Slice pork and drizzle with sauce. Serve.
