Ingredients
- 1 bag baby red potatoes (24–28 oz), halved
- 2 tablespoons canola oil
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- 1 package watercress (4–5 oz)
- ⅓ cup honey mustard yogurt dressing
- 2 tablespoons capers, drained
Steps
- Preheat oven to 400°F. Halve potatoes. Combine in large bowl; potatoes, oil, salt, and pepper until blended. Arrange potatoes in single layer on baking sheet; bake 18–20 minutes or until tender when pierced by a fork.
- Let potatoes stand 5 minutes. Remove large stems from watercress. Toss potatoes with dressing, capers, and watercress. Serve.
