Ingredients
- 2 lb strip loin roast
- 2 tablespoons cracked peppercorns (or coarse ground black pepper)
- 2 teaspoons kosher salt
- ½ cup Dijon mustard
Steps
- Preheat oven to 475°F. Place beef in shallow roasting pan (fat side up); season with pepper and salt. Cook roast for 10 minutes. Reduce heat to 350°F; cook roast 35 more minutes.
- Remove roast from oven; spread mustard over top of roast. Cook roast 10-15 more minutes or until 145°F (for medium rare). Use a meat thermometer to accurately ensure doneness. (Roast weights vary; adjust cook time as needed.)
- Transfer roast to cutting board; let stand 10-15 minutes before slicing thinly across the grain.

- Grill: Preheat grill to medium. Season 2 lb strip loin roast with Montreal or other steak seasoning; grill over direct heat for 20-25 minutes on each side or until roast is 145°F (for medium rare). Let roast stand 10-15 minutes before slicing.
