Ingredients
- Nonstick aluminum foil
- 2 lb baby gold potatoes
- 1 lemon
- 6 cloves garlic
- 2 tablespoons olive oil
- 2 teaspoons truffle oil
- 2 teaspoons mixed-up salt
Steps
- Preheat oven to 300°F. Line baking sheet with foil. Halve potatoes.
- Zest lemon (2 teaspoons); chop garlic (1 tablespoon). Add to large bowl: potatoes, lemon zest, garlic, olive and truffle oil, and salt; toss to coat.
- Arrange potatoes on baking sheet in single layer; roast 45–50 minutes until browned and tender. Serve immediately.
