Ricotta Cheese and Almond Barfi

Ingredients

  • Cooking spray
  • Parchment paper
  • 15 oz whole milk ricotta cheese
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup almond flour
  • 1 tablespoon sugar
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cardamom
  • 1 tablespoon ghee (clarified butter)
  • ¼ cup sliced almonds
  • ¼ teaspoon saffron threads (optional)

Steps

    1. Coat 9-inch baking dish with spray, then line with parchment, letting excess hang over sides. Combine in large, nonstick saucepan: cheese, condensed milk, almond flour, sugar, and salt; cook on medium 8–10 minutes, stirring occasionally, until mixture begins to thicken.
    2. Stir in cardamom and ghee. Cook and stir 20–25 minutes until mixture is very thick and 200°F. Spread mixture immediately into baking dish; sprinkle with almonds and saffron, if using. Let stand to cool 10 minutes, then chill 2 hours. Cut into squares and serve.
