Red Wine Cookie Brownies

Ingredients

  • 1 ½ cups red wine (or pomegranate juice), divided
  • Nonstick aluminum foil
  • Cooking spray
  • 1 package chocolate brownie mix (18–18.4 oz)
  • ⅔ cup canola oil
  • 2 large eggs
  • 15 chocolate sandwich cookies, divided
  • ⅓ cup heavy whipping cream
  • 1 cup dark (or semisweet) chocolate morsels

Steps

    1. Preheat oven to 350°F. Pour wine in medium saucepan on medium; simmer 8–10 minutes until reduced to ½ cup. Remove from heat and let stand to cool 10 minutes.
    2. Line 8-inch-square baking dish with foil, then coat foil with spray. Prepare brownie mix following package instructions (using ⅔ cup oil, 2 large eggs, and ¼ cup wine reduction). Spread one-fourth batter evenly into baking dish. Arrange 12 cookies in rows over batter, then spread remaining three-fourths batter evenly over cookies.
    3. Bake 30–35 minutes until top is crisp and center is set. Let stand to cool 30 minutes in pan.
    4. Crush remaining 3 cookies coarsely. Pour cream into microwave-safe dish; microwave on HIGH 1 minute or until steaming. Add chocolate morsels and let stand 5 minutes. Add remaining ¼ cup wine reduction and whisk until smooth. Pour ganache evenly over brownies and sprinkle with crushed cookies. Chill 10 minutes or until set; cut into bars and serve.
