Ingredients
- 1 cup apple cider
- ⅓ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon pumpkin (or apple) pie spice
- 2 tablespoons unsalted butter
- For waffles
- ¼ cup unsalted butter
- 2 ½ cups all-purpose baking mix
- 2 teaspoons pumpkin (or apple) pie spice
- 1 cup pumpkin puree
- 2 cups whole milk
- 4 large eggs (or 1 cup egg substitute)
- Cooking spray
Steps
- Prepare syrup. Combine all ingredients (except butter) in medium saucepan on medium-low. Bring to a simmer; simmer 10–12 minutes until sugar has dissolved and mixture has reduced by one-half. Remove from heat and stir in butter until melted. Keep warm.
- Prepare waffles. Melt butter. Combine baking mix and pie spice in large bowl. Whisk in second bowl: pumpkin, milk, eggs, and butter. Pour pumpkin mixture into dry mixture and whisk until blended. Let stand 5 minutes. Meanwhile, preheat waffle iron and coat with spray.
- Cook waffles following waffle iron manufacturer's instructions. Serve with syrup. (Makes 8 large waffles.)
