Ingredients

  • ¼ cup coconut oil
  • Parchment paper
  • Cooking spray
  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon kosher salt
  • ⅔ cup pumpkin puree
  • ⅔ cup almond butter
  • 1 large egg
  • ⅔ cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups dark (or semisweet) chocolate chunks, divided

Steps

    1. Preheat oven to 350°F. Melt coconut oil and let stand to cool. Coat 8-inch square baking dish with spray. Line dish with parchment, letting excess hang over sides, then coat parchment with spray. Combine in small bowl: almond flour, coconut flour, baking soda, pie spice, and salt.
    2. Beat with electric mixer in large bowl: pumpkin puree, almond butter, egg, coconut sugar, coconut oil, and vanilla until blended and smooth. Mix in flour mixture until batter forms, then stir in 1 cup chocolate chunks.
    3. Spread batter evenly into baking dish and top with remaining ½ cup chocolate chunks. Bake 25–30 minutes until center is just set. Let stand to cool completely in pan before removing and cutting into bars. Serve.
