Ingredients
- 4 limes, for zest/juice
- 1 cup pineapple juice, chilled
- ½ cup pumpkin puree
- 1-inch piece fresh ginger, peeled and grated
- 4 tablespoons agave nectar (or honey)
- Crushed Ice
- Ground nutmeg (optional for garnish)
Steps
- Zest 2 limes (1 ½ teaspoons) and juice all 4 limes (¼ cup); peel and grate ginger (1 tablespoon). Combine all ingredients (except ½ teaspoon lime zest and ice), whisk until well blended. Chill until ready to serve.
- Fill 2 serving glasses with ice and pour in pumpkin mixture. Sprinkle with reserved lime zest and nutmeg, if desired.
