Pulled Brisket Latke Tacos

Ingredients

  • 1 large sweet onion
  • 6 cloves garlic
  • 1 tablespoon brown sugar
  • 1 tablespoon ground coffee
  • 1 tablespoon smoked paprika
  • 2 teaspoons kosher salt
  • 1 beef brisket (about 3 lb)
  • 1 cup barbecue sauce
  • ½ cup reduced-sodium soy sauce
  • ½ cup water
  • Aluminum foil
  • 2 (6 oz) boxes potato latke mix
  • 4 large eggs
  • 1 cup vegetable oil, divided
  • ½ cup pickled red cabbage
  • 2 oz fresh chives
  • 10 teaspoons horseradish sauce, divided

Steps

    1. Preheat oven to 350°F. Slice onion and garlic. Combine sugar, coffee, paprika, and salt; coat brisket with seasoning mixture (wash hands). Combine barbecue sauce, soy sauce, water, onions, and garlic; pour into 13- x 9-inch baking dish. Nestle brisket into sauce and cover dish tightly with foil.
    2. Place dish in oven; bake 3 ½–4 hours until 185°F (for sliceable). Let brisket rest in cooking liquid 30 minutes (or chill overnight).
    3. Prepare latke mix according to package instructions (using eggs). Heat ½ cup oil in large, nonstick sauté pan on medium 3–4 minutes. Drop ¼-cup portions of latke mixture into hot oil (in batches). Panfry 2–3 minutes on each side until golden. Repeat with remaining batter, adding more oil to pan as needed.
    4. Chop brisket and toss with 1 cup cooking liquid; drain cabbage and slice chives. Top each latke with ¼ cup brisket mixture, 1 teaspoon cabbage, and ½ teaspoon horseradish sauce. Sprinkle with chives; serve.
