Puffed Cheddar Rolls

Ingredients

  • Nonstick aluminum foil
  • 1 cup water
  • 6 tablespoons unsalted butter
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon dried thyme (or rosemary)
  • 6 oz sharp cheddar (or Gorgonzola) cheese
  • 1 ½ cups all-purpose flour
  • 4 large eggs

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Place in medium saucepan: water, butter, salt, and thyme; bring to a boil. Shred cheese.
    2. Stir flour into butter mixture; cook and stir 2–3 minutes until dough forms. Transfer dough to large bowl and let stand 3 minutes.
    3. Beat dough with electric mixer on LOW 30 seconds. Add eggs 1 at a time, continuing to beat on LOW, until eggs are fully incorporated and dough is glossy and smooth. Add cheese and beat until thoroughly combined.
    4. Scoop (or form) dough into 18 balls (about 2 tablespoons each) and arrange on baking sheet. Bake 18–20 minutes until golden and puffed. Serve warm.
