Ingredients
- Nonstick aluminum foil
- 1 cup water
- 6 tablespoons unsalted butter
- 1 ½ teaspoons kosher salt
- 1 teaspoon dried thyme (or rosemary)
- 6 oz sharp cheddar (or Gorgonzola) cheese
- 1 ½ cups all-purpose flour
- 4 large eggs
Steps
- Preheat oven to 400°F. Line baking sheet with foil. Place in medium saucepan: water, butter, salt, and thyme; bring to a boil. Shred cheese.
- Stir flour into butter mixture; cook and stir 2–3 minutes until dough forms. Transfer dough to large bowl and let stand 3 minutes.
- Beat dough with electric mixer on LOW 30 seconds. Add eggs 1 at a time, continuing to beat on LOW, until eggs are fully incorporated and dough is glossy and smooth. Add cheese and beat until thoroughly combined.
- Scoop (or form) dough into 18 balls (about 2 tablespoons each) and arrange on baking sheet. Bake 18–20 minutes until golden and puffed. Serve warm.
