Prosciutto Melon Salad

Ingredients

  • 2 cups cantaloupe, cut into bite-size pieces
  • 4 slices prosciutto, cut into bite-size pieces
  • ½ cup slivered almonds
  • ½ cup red wine vinaigrette
  • 1 tablespoon fresh tarragon leaves, coarsely chopped

Steps

    1. Place all ingredients in salad bowl.
    2. Toss salad to coat evenly. Serve chilled.
Other Preparation Methods
    • Smoothie: Place in blender: 2 cups cantaloupe chunks, ¼ cup honey, ¼ cup Greek yogurt, and ¼ cup orange juice; blend 30 seconds. Add ½ cup ice; blend until smooth. Add more ice, if desired.
