Pork Sliders with Cola-Barbecue Onions

Ingredients

  • 2 large sweet onions
  • 2 tablespoons olive oil
  • 3 teaspoons barbecue seasoning, divided
  • 1 (7.5 oz) can cola (about ¾ cup)
  • 1 tablespoon liquid smoke
  • 1 cup ketchup
  • 1 tablespoon sriracha sauce (or hot sauce)
  • 4 boneless pork loin chops (about 1 ½ lb)
  • 1 (10 oz) bag vegetable slaw
  • ½ cup Italian vinaigrette
  • 1 (12 ct) package slider buns

Steps

    1. Preheat grill (or grill pan) on medium-high. Halve onions and slice thinly (4 cups). Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan; add onions and 1 teaspoon seasoning. Cook 12–15 minutes, stirring occasionally, until onions begin to brown.
    2. Reduce heat to medium-low. Add cola, liquid smoke, ketchup, and sriracha sauce to onions; simmer 5–6 minutes until mixture thickens.
    3. Meanwhile, season pork with remaining 2 teaspoons seasoning, place on grill (wash hands), and cook 2–3 minutes on each side until 145°F. Remove from grill and let stand 5 minutes before slicing. Combine slaw mix and vinaigrette; stir to coat.
    4. Slice pork thinly. Toast slider buns if desired. Divide slaw and pork evenly among bottom buns. Top with onion mixture and top halves of buns. Serve.
