Ingredients

  • ¼ cup all-purpose flour
  • 2 large eggs (or ½ cup egg substitute)
  • 1 cup plain breadcrumbs
  • 4 pork cubed steaks (about 1 ½ lb total)
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 4 tablespoons canola oil, divided

Steps

    1. Place flour in shallow bowl, whisk eggs in second bowl, and place breadcrumbs in third bowl. Preheat large sauté pan on medium-high 2–3 minutes.
    2. Season both sides of pork with salt and pepper; dredge pork in flour, coating both sides (shake off excess), dip into eggs (letting excess drip off), and coat both sides with breadcrumbs, pressing with fingers to adhere (wash hands).
    3. Place 2 tablespoons oil in pan, then add 2 pork steaks; cook 4–5 minutes on each side until pork is 160°F. Repeat with remaining 2 pork steaks. Serve.
