Ingredients
- 1 lb Deli fully cooked mojo (or smoked) pork
- 1 (15 oz) can low-sodium black beans
- 6 tostada shells
- ¾ cup crema (or sour cream)
- 1 teaspoon chipotle pepper sauce (+ additional, optional for serving)
- 1 ½ cups shredded lettuce
- 1 cup diced fresh tomatoes
- ½ cup salsa verde
- 1 cup queso fresco
Steps
- Preheat oven to 350°F. Microwave pork on HIGH 2–3 minutes until 165°F. Drain and rinse beans. Shred pork with 2 forks.
- Arrange tostada shells on baking sheet. Combine crema and chipotle sauce, then spread 2 tablespoons sauce in center of each shell; top with even amounts beans and pork. Bake 5–7 minutes until tostadas are crispy.
- Top tostadas with lettuce, tomatoes, salsa, and queso fresco. Serve.
