Pork and Black Bean Tostadas

Ingredients

  • 1 lb Deli fully cooked mojo (or smoked) pork
  • 1 (15 oz) can low-sodium black beans
  • 6 tostada shells
  • ¾ cup crema (or sour cream)
  • 1 teaspoon chipotle pepper sauce (+ additional, optional for serving)
  • 1 ½ cups shredded lettuce
  • 1 cup diced fresh tomatoes
  • ½ cup salsa verde
  • 1 cup queso fresco

Steps

    1. Preheat oven to 350°F. Microwave pork on HIGH 2–3 minutes until 165°F. Drain and rinse beans. Shred pork with 2 forks.
    2. Arrange tostada shells on baking sheet. Combine crema and chipotle sauce, then spread 2 tablespoons sauce in center of each shell; top with even amounts beans and pork. Bake 5–7 minutes until tostadas are crispy.
    3. Top tostadas with lettuce, tomatoes, salsa, and queso fresco. Serve.
