Ingredients
- 2 limes, for slices
- 1 oz fresh mint (+ more, optional for garnish)
- ⅓ cup superfine sugar
- 1 cup pineapple chunks
- 1 (750 ml) bottle medium-bodied white wine
- ½ cup pineapple juice
- ½ cup light rum (optional)
- 2 cups lemon-lime soda
- Pineapple wedges (optional for garnish)
Steps
- Slice limes thinly; remove mint leaves from stems. Muddle lime slices, mint leaves, and sugar in large pitcher.
- Add pineapple chunks, wine, pineapple juice, and rum, if using. Cover and chill 2–3 hours.
- Stir in lemon-lime soda and pour into ice-filled old fashioned glasses. Garnish with pineapple wedges and mint leaves, if desired.
Other Preparation Methods
Don't like pineapple?
Substitute fresh mango or papaya chunks and juice.
