Pimiento Cheese and Bacon Tater Cups

Ingredients

  • Cooking spray
  • 36 frozen potato puffs (about 3 cups)
  • ¾ cup pimiento cheese dip
  • ¼ cup cooked bacon pieces
  • 3 green onions

Steps

    1. Preheat oven to 425°F. Coat 12-cup muffin pan with spray. Place 3 potato puffs in each muffin cup; bake 10 minutes or until hot and edges start to brown.
    2. Press potato puffs firmly into cup using ¼-cup measuring cup or small glass. Bake 10 minutes more or until crisp and golden brown.
    3. Meanwhile, slice green onions thinly. Top each cup with 1 tablespoon pimiento cheese and 1 teaspoon bacon pieces. Bake 3–4 minutes more until cheese is hot. Sprinkle evenly with green onions. Serve.
