Pimiento Cheese and Bacon Quiche

Ingredients

  • ½ cup cooked bacon pieces
  • 1 cup pimiento cheese (about 6 oz)
  • 1 frozen deep-dish piecrust
  • 3 large eggs (or ¾ cup egg substitute)
  • 1 cup heavy whipping cream
  • ¼ cup sour cream
  • ⅓ cup sliced fresh green onions
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper

Steps

    1. Preheat oven to 350°F. Combine bacon and pimiento cheese; spread in bottom of piecrust.
    2. Combine in medium bowl: eggs, heavy cream, sour cream, green onions, salt, and pepper; whisk to blend. Pour mixture into piecrust. Bake 45–50 minutes until center is set and 160°F. Let stand 15 minutes to cool. Slice and serve.
    Chef's Tip: To make ahead, bake quiche and let cool completely, then wrap tightly and freeze. When ready to serve, cover with foil and bake at 350°F 30–45 minutes until 165°F.
