Ingredients
- 1 ¾ lb boneless, skinless chicken breast
- 2 teaspoons Montreal chicken seasoning
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 3 tablespoons basil pesto
- 1 tablespoon Dijon mustard
Steps
- Coat chicken with seasoning (wash hands). Preheat oil in large sauté pan and add chicken. Cook 6–8 minutes, on each side, turning occasionally, until browned and 165°F.
- Combine lemon juice, pesto, and mustard. Slice chicken and drizzle with sauce.
Other Preparation Methods
- Grill: Preheat grill. Coat 1 ¾ lb chicken breasts with 2 teaspoons blackening seasoning and 1 tablespoon oil. Grill 6–8 minutes, on each side, turning often, until grill-marked and 165°F. Slice chicken and top with crumbled goat cheese.
- Bake: Crush 2 cups corn flakes finely. Cut 1 ¾ lb chicken breast into 1-inch strips. Coat chicken in ⅓ cup spicy mayonnaise, then in corn flakes. Place on foil-lined baking sheet. Bake 12–15 minutes until browned and 165°F.
