Pesto-Dijon Chicken Breasts

Ingredients

  • 1 ¾ lb boneless, skinless chicken breast
  • 2 teaspoons Montreal chicken seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 3 tablespoons basil pesto
  • 1 tablespoon Dijon mustard

Steps

    1. Coat chicken with seasoning (wash hands). Preheat oil in large sauté pan and add chicken. Cook 6–8 minutes, on each side, turning occasionally, until browned and 165°F.
    2. Combine lemon juice, pesto, and mustard. Slice chicken and drizzle with sauce.
Other Preparation Methods
    • Grill: Preheat grill. Coat 1 ¾ lb chicken breasts with 2 teaspoons blackening seasoning and 1 tablespoon oil. Grill 6–8 minutes, on each side, turning often, until grill-marked and 165°F. Slice chicken and top with crumbled goat cheese.
    • Bake: Crush 2 cups corn flakes finely. Cut 1 ¾ lb chicken breast into 1-inch strips. Coat chicken in ⅓ cup spicy mayonnaise, then in corn flakes. Place on foil-lined baking sheet. Bake 12–15 minutes until browned and 165°F.
