Ingredients
- 1 package meatless ground (or ground beef; 12–16 oz)
- 6 tablespoons vegetable oil, divided
- 2 tablespoons taco seasoning
- 1 (8 ct, 12 oz) package low-carb (or your favorite) flour tortillas
- ¼ cup water
- ½ cup red enchilada sauce, divided
- 8 tablespoons vegetarian refried beans
- 1 ½ cups shredded cheddar cheese (or dairy-free shreds)
- ½ cup white queso dip
- ¼ cup taco sauce
- Sour cream (optional, for serving)
- Chunky salsa (optional, for serving)
- Guacamole (optional, for serving)
Steps
- Thaw ground if needed. Preheat oven to 400°F.
- Preheat large sauté pan on medium-high 2–3 minutes. Place 2 tablespoons oil in pan, then add ground; cook 4–5 minutes stirring to crumble, until no pink remains and ground is 160°F. Reduce heat to medium-low; stir in seasoning, water, and ¼ cup enchilada sauce. Cook and stir 2 minutes until mixture thickens. Remove pan from heat.
- Coat both sides of tortillas with remaining 4 tablespoons oil. Place 2 tortillas each flat on 2 baking sheets; prick tortilla all over with a fork. Bake 8–10 minutes until tortillas are crispy, flipping halfway through cook time. Repeat with remaining 4 tortillas.
- Spread 2 tablespoons beans each onto 4 tortillas. Top evenly with 1 cup taco ground and ½ cup shredded cheese. Top with remaining tortillas; spoon 1 tablespoon enchilada sauce on top of each tortilla. Sprinkle pizzas with remaining 1 cup shredded cheese. Bake 4–5 minutes until cheese is melted.
- Microwave queso following package instructions. Drizzle pizzas evenly with queso and taco sauce. Top with sour cream, salsa, and guacamole, if using. Serve.
Chef's Tip: This recipe only uses half of the taco ground. Try the remaining 6 oz in tacos, chili, or quesadillas.
