Pepper and Onion Cheeseburgers

Ingredients

  • ½ cup roasted red peppers
  • 2 cups coleslaw mix
  • ¼ cup lemon vinaigrette
  • ½ teaspoon kosher salt
  • 1 ½ lb ground chuck
  • 1 cup shredded cheddar cheese
  • ½ cup crispy fried onions
  • Cooking spray
  • ½ cup sweet and spicy barbecue sauce
  • 4 hamburger buns

    Steps

      1. Preheat grill (or grill pan) on medium-high. Chop peppers coarsely. Combine coleslaw mix, vinaigrette, and salt until blended; set aside.
      2. Combine ground chuck, cheese, crispy onions, and peppers until blended. Form into 4 patties (wash hands). Coat patties on both sides with spray; grill 4–5 minutes on each side until grill-marked and 160°F.
      3. Spread 2 tablespoons barbecue sauce on inside of each bun. Place burgers on bottom halves of buns; top each with ½ cup slaw. Complete with top buns; serve.
