Ingredients

  • Parchment paper
  • 2 (1.9 oz) packages frozen phyllo shells
  • ½ cup pecan pieces
  • 2 tablespoons light corn syrup
  • ¼ cup dark brown sugar
  • 2 tablespoons salted butter
  • ½ teaspoon ground cinnamon
  • 1 large egg
  • 1 teaspoon vanilla extract

Steps

    1. Preheat oven to 325°F. Line baking sheet with parchment. Arrange phyllo shells on baking sheet. Chop pecans finely.
    2. Combine corn syrup, brown sugar, butter, and cinnamon in medium saucepan, then bring to a boil on medium. Pour mixture into large bowl; let stand until cooled to room temperature, whisking occasionally.
    3. Stir in egg, vanilla, and pecans; fill phyllo shells evenly with mixture (about 1 teaspoon each). Bake 10–12 minutes until centers are set and 160°F. Let stand to cool completely before serving.
